I'm obsessed with many Asian things...Asian cars (Honda, Toyota), Asian dogs (Akitas), Asian countries (top of my list for international travel), Asian decor (cherry blossoms, bamboo), and of course...Asian food. I LOVE sushi!! Soooo so much. Now don't feel bad for me thinking I can't have it anymore...there are plenty of restaurants that will happily make me some loaded veggie sushi. PLUS, there's plenty more to be enjoyed when you go out for sushi! Miso soup...seaweed salad...edamame...and something like this:
WHOA. THERE. TURBO. I has been wayyyy too long. I have missed food blogging! Luckily I've had plenty of time to try new recipes and therefore only present to you the best of the best!! I would love to catch you all up on my extravagant life (work, work, grad school apps, car troubles, and more work), but I will save that for a later date. We have more important things to address right now...

I'll be the first to admit I'm not the best at coming up with recipes off the top of my head...however I was recently inspired by the most decadent, easy to use, pre-marinated sprouted tofu by Wildwood. I am pretty proud of myself for coming up with such a healthful, simple, delicious, and easy-to-prepare meal!
If the mix of ingredients seems rather out of character for me...that may be because I recently read Thrive by Brendan Brazier. I was enthralled with the ideas he presented in the book and I have been experimenting with more Thrive-centric recipes. I am making a slow transition but I hope to kick it into full-gear once I've moved into my new apartment at the end of the month :) This recipe isn't exactly all that Thrive is about...but it employs a lot of the same nutritional values. So give it a try! Maybe you'll turn into a vegan athlete too! Ask and you shall receive. I posted a quick survey on my blog last night to find out how I should use udon noodles in my next blog post. Okay, okay...shameless plug over. This recipe is spectacular for sooo many reasons; but I'll keep it to three: it is high in protein, it is super quick and easy to make, and it is deeelicious! I was pleasantly surprised when I discovered the ease with which this meal came together, the flexibility it allowed for personal preference, and the fact that it is packed with plant protein. As an added bonus it tastes like take-out! Amazing. I think this would also be a great "starter" recipe for people curious about trying a vegan diet. The only thing I can suggest to enhance the nutritional value even more would be to use higher-fiber udon noodles (maybe made from brown rice...mine only had 2g per serving) and low-sodium soy sauce, which I didn't have on hand. Otherwise, the nutrition profile is perfectly balanced. Love it when things come together like that :) On the off chance that I can't veganize whatever the rest of my family is having...I have to come up with something that will be quick, easy, and satisfying. There is always the classic bean and grain salad option...but I had some seitan that needed to be eaten and some carrots and kale calling my name [due to a fried juicer : ( ]
The result? A quick, versatile weeknight meal thats super filling, healthy, and tasty! Whoa. there. turbo. Think you can handle it? I personally despise cole slaw...I think it is one of the most disgusting side dishes (besides stuffing) known to man; but when I saw this recipe on another blog, I was drooooling. However it turns out that for my own personal use, I could not make this slaw the way it was originally done. I suggest you check out The Baking Barrister if you would like to see/make the original recipe which is more of a side on its own. My version would most likely be used to accompany/garnish tacos. Although it isn't as glorious, the taste and colors are still fantastic. This would be great as a light refreshing accompaniment to other glorious vegan main dishes (as you will see probably next week). Words cannot describe how elated I am that my first attempt to make pizza from scratch was successful. This recipe is Vegan, delicious, and healthy. What's not to love?! So go ahead and give it a try.
Although it took a bit of time to come together, this really was easy to make and sooo worth it!
